Scince I have discovered this thread I thought to post old ideas, which I and another user of the german wog had:
1) additional percentual healing-power to all Food-items (e.g. roasted meat restores 5-10% HP)
There is a ninja-patch from Kirides called PercentPotions, which does the same for Potions. Same would be nice for Food-items too.
2) configurable bonus-damage to sneak-attacks. Should only apply if the NPC hasn't recognized the PC.
In a youtube-video I have once seen a mod, which has a special sneak-kill-dagger and a special animation for sneak kills with this dagger, but I am thinking of something more easy and less complex. E.g. since the first version of Returning the PC could do simple bonus-damage to any NPC while sneaking, if the NPC hasn't recognized the PC.
3) Respawn of monsters and/or plants
4) progressively increasing stats of all NPCs by [PC-Level * x]%
5) Spawn of an essential (=not killable, but knock-out-able) companion.
Either with or without the use of a rune, which is given to the player on gamestart. The creator of Ninja (mud freak) created a Ninja-Patch, which spawns the NPC Mud from Gothic 1 besides the PC. Therefore it must be possible to use this kind of technique to spawn a NPC which can be used as a companion. Power grows with PC-level. Maybe additional powers/abilities grow with PCs magic circle. Maybe the PC can choose between weaker/stronger companion-creatures depending on magic circle.
6) Additional levels/uses for the claw of beliar.
In the german mod MiniModBalance the PC could transform the claw of beliar to an arrow or bolt.
In the german mod VarusBiker Edition the PC could level the claw of beliar to higher levels, so it became the absolute best weapon even in the late game.
7) Effects for weapon types. Blunt ignores some armor, Blade can cause some bleeding. Ore-weapons should be (partially) armor piercing like some dialogues in gothic said. This goes for the self-forged ore-wepaons as well as for the paladin-ore-weapons. To take it further: Maybe different animations for each weapon-type.
8) zNoPrayCooldown for Vatras and Beliar. The existing version of zNoPrayCooldown only works for Innos shrines by now.
9) more useful cooking and roasting stations/pans/ovens. Option to cook/roast all fish/meat at once or at least a higher quantity than one by one.
same for smithing at heater/anvil.
10) wait-menu like in Bethesda-games (TES, Fallout, ...)
11) probably some (configurable or) small bonuses from doing actions, like slash and craft in Returning, but not as a replacement for normal learning.
12) plugin to overwrite learning-points-system of the vanilla game and/or mods.
There are some mods which kept the bad learning-point-system from vanilla gothic, where the consumption of bonuses (stone plates, potions with permanent effects, ...) had the side effect to increase the learning costs for the attribute/skill as well, instead of not counting them in. Bonuses should be bonuses and should be used, as soon as you find them and not saved all together until the end of the game, when they are obsolete already.

The german mod Nostalgic Edition contains a rune which makes the PC able to command companions.
